This statue, made about three hundred years ago, is of the Christian martyr St Apollonia who was killed around the year 250. Apollonia (from Egypt) was hit in the mouth until her teeth shattered and then had them removed with pliers. People used this statues as a focus for their prayers when they had toothaches.
